🥔 Kid-Friendly Potato Salad Recipe

Servings: 4–6
Prep Time: 15 minutes
Cook Time: 15–20 minutes

✅ Ingredients:

  • 4 medium potatoes (peeled and cut into chunks)
  • 1/2 cup mayonnaise
  • 1 tsp yellow mustard (optional for extra flavor)
  • 1 boiled egg (chopped – optional)
  • 1/4 cup finely chopped carrots (lightly steamed or raw if tender)
  • 1/4 cup finely chopped celery (optional)
  • Salt to taste
  • A pinch of black pepper (optional)
  • Chopped parsley for color (optional)

👩‍🍳 Directions:

  1. Boil potatoes in salted water for 15–20 minutes or until soft but not mushy. Drain and let cool.
  2. In a large bowl, mix mayonnaise, mustard (if using), and a pinch of salt.
  3. Add the cooled potatoes, carrots, and egg (if using). Mix gently to coat.
  4. Add a tiny bit of pepper and parsley if you'd like.
  5. Chill in the fridge for 30 minutes before serving for best taste.

📝 Tips:

  • Mash slightly for a smoother texture.
  • Skip mustard if your kids don’t like tangy flavors.
  • Serve with crackers, fruit, or as a side with lunch.
