🌈 Rainbow Irish Nachos (Kid-Friendly)

Servings: 4–6
Prep Time: 15 minutes
Cook Time: 10 minutes

Ingredients

  • 4–5 medium potatoes (Yukon gold or red potatoes), thinly sliced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup green bell pepper, diced
  • ½ cup red bell pepper, diced
  • ½ cup yellow bell pepper, diced
  • ½ cup purple cabbage, shredded
  • 2–3 tablespoons sour cream (optional)
  • Fresh chives for garnish
  • Optional: cooked bacon bits or diced ham for extra flavor

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare the potatoes: Wash and thinly slice potatoes into rounds (kids can help with washing and laying slices on the sheet).
  3. Season and roast: Toss potato slices with olive oil, salt, and pepper. Spread in a single layer on the sheet. Roast for 10–12 minutes, flipping halfway, until golden and slightly crispy.
  4. Assemble the nachos: Arrange roasted potato slices on a serving plate. Sprinkle cheese over warm potatoes so it melts nicely.
  5. Add rainbow toppings: Let kids decorate with colorful veggies — green, red, yellow bell peppers, and purple cabbage — to make a rainbow on top of the nachos.
  6. Add finishing touches: Dollop a little sour cream, sprinkle chives, and optionally top with bacon bits or diced ham.
  7. Serve warm and enjoy your St. Patrick’s Day feast!

Fun Tips for Kids

  • Use cookie cutters to shape potato slices into shamrocks before roasting.
  • Let kids create the rainbow pattern themselves with bell peppers and cabbage.
  • Talk about the colors of the rainbow while assembling — a fun learning moment!
