🥔 Cozy Potato Leek Soup (Kid-Approved!)
Looking for a warm, creamy soup that even picky eaters will love? This potato leek soup is smooth, mild and super comforting; perfect for a chilly day!
🛒 Ingredients
- 3 large potatoes (peeled and chopped)
- 2 leeks (white and light green parts only, sliced thin)
- 2 tablespoons butter
- 3 cups chicken or vegetable broth
- 1 cup milk (for extra creaminess)
- Salt and pepper to taste
- Optional: shredded cheese or crispy bacon bits for topping
👩🍳 Directions
- Get prepped
Wash your leeks really well (they can hide dirt!) and slice them. Chop your potatoes into small chunks. - Cook the leeks
In a big pot, melt the butter over medium heat. Add the leeks and cook for about 5 minutes until soft (not browned). - Add the potatoes
Toss in the chopped potatoes and stir everything together. - Pour and simmer
Add the broth. Bring it to a boil, then lower the heat and let it simmer for about 15–20 minutes until the potatoes are soft. - Blend it up
Carefully blend the soup until smooth (grown-up help needed here!). If you like it chunky, blend just half. - Make it creamy
Stir in the milk, then add a pinch of salt and pepper. - Serve and enjoy!
Top with cheese or bacon bits if you want a fun extra touch!
⭐ Kid Tips
- Let kids help wash the leeks and stir the pot (with supervision!)
- Call it “Green Monster Soup” to make it extra fun
- Serve with crusty bread for dipping!
Perfect for cozy family nights and easy enough to make together 💛
